Brinjal sesame fry

Ingredients:
2 pounds brinjal, cut to 1inch pieces
1 medium onion, chopped
2 green chillies, chopped
3 tsp sesame seeds and 1 tsp coriander,  powdered
2 cloves garlic,  chopped
2tbsp oil
1/2 tsp cumin seeds
1/2 tsp mustard seeds
Salt
Directions:
In a wide skillet, heat oil, fry cumin, mustard seeds and garlic.  Add chillies, onions and brinjal pieces with salt, stir well, cover and cook for 5 minutes.  Stir again and fry for another 10 minutes,  until the vegetables are soft. Add sesame powder, mix well, cover and turn off heat. Serve with rice after 5 minutes.

Chicken fry, andhra style

Ingredients:
Whole chicken, cut to small pieces.
1 large onion, chopped
4 green chillies, chopped
2 tsp Ginger garlic paste
2 tsp chilli powder
2 tsp Dhaniya powder
1tsp garam masala powder (cinnamon,cloves)
2tbsp chopped coriander leaves
1tsp turmeric
2 tsp lemon juice
salt
3tbsp oil.
Directions:
Add  salt, lemon juice and 1tsp chilli powder to chicken, mix well. cover and keep refrigerated for 2hrs. cook the chicken in pressure cooker for 3 whistles. 
In a wide pan, heat oil and fry onion and green chillies for 3minutes. Add salt and ginger garlic paste, fry for another 5minutes. Take the chicken from pressure cooker, drain the liquids if any. Add to the onions, add remaining chilli powder and turmeric powder. fry for 10 minutes. add Dhaniya powder, garam masala and coriander leaves. mix well. turn off heat  and leave covered for 10mintues before serving.

Kohlrabi curry ( called noolcol in telugu)

Ingredients:
3 Kohlrabi, peeled and diced
3-4 green chillies chopped
3tbsp oil
1 tsp salt
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 cloves garlic, chopped
chopped coriander leaves
pinch turmeric
Directions:
In a wide pan, heat oil, add cumin, mustard seeds, garlic and turmeric, fry for 1 minute. add kohlrabi pieces, green chillies and salt. mix well, cover and cook for 5 minutes.
Continue to cook until soft. add coriander leaves and turn off heat. Serve with white rice

Pudina pacahdi/ Mint chutney


Ingredients:
Mint leaves, 2 cups
Green chillies,  3-4
Dry chillies,  2
Garlic,  2 cloves
Cumin , 1/2 spoon
Tamarind,  as per taste
Salt
Oil, 2tsp
Directions:
In a pan heat oil and fry chillies for 2minutes and remove.  In the same oil fry mint  and tamarind for 5minutes, covered. 
Blend all the ingredients.

Green beans Ground chicken fry

Ingredients:
2 pounds Ground chicken
1 pound fresh green beans, chopped
1 medium onion, chopped
3-4 green chillies, chopped
1spoon,ginger garlic paste
1 spoon,coriander powder
1/2 spoon, garam masala (cloves,cinnamon)
curry leaves (optional)
Salt
Chilli powder
Turmeric
3spoons oil
Directions:
Heat oil in a heavy bottom skillet. Add onions, green chillies and green beans, fry for 5minutes. add ginger garlic paste, 1/2 spoon salt and fry for another 5 minutes. add ground chicken and turmeric, cover and fry for 10 minutes. Add more salt and chilli powder, fry until chicken is dry. Add coriander powder and garam masala, mix well, cook for 2minutes. add curry leaves, cover and turn off heat. serve with rice or roti.

Asparagus curry

Ingredients:
Asparagus Bunch( about 20 stalks), Chopped
1 Large onion ,Chopped
5-6 green chillies, Chopped
3 cloves garlic, Chopped
1 cup Milk
Curry leaves
3 spoons oil
1/2 spoon each Cumin and mustard seeds
1/4 spoon turmeric
1/2 spoon coriander powder
Salt
Directions:
Heat oil in a  sauce pan, Add cumin,mustard seeds, turmeric, chopped garlic and curry leaves. Fry for 1/2 minute, add onions, Asparagus, green chillies and salt.Mix well , cover and cook for 5 minutes. Add milk, cover and cook for another 10 minutes, stirring occasionally. Check to see if the Asparagus is soft enough, add more milk or water if needed. Add coriander powder, mix well cover and cook more. Serve with rice or roti.

Capsicum sesame curry

Ingredients:
2 large capsicum,  chopped
1 medium onion,  chopped
4 green chillies,  chopped
3 cloves garlic, chopped
3spoons oil
1/2 spoon mustard seeds
1/2 spoon cumin seeds
Curry leaves
1/4 spoon turmeric
2 table spoons sesame seeds,  grind to powder
Salt
Directions:
Heat oil in a wide skillet.  Add cumin, mustard seeds and chopped garlic.  Add turmeric and curry leaves, fry few seconds.  Add capsicum,  onion and green chillies, cover and cook for 5 minutes in medium flame. Add salt, mix well and cook for another 5 minutes.  Add sesame powder,  mix well, cover and cook for 2 minutes.  Serve with rice or roti.

Baked meat balls

Ingredients:
Ground chicken - 1lb
1 onion chopped
3 green chillies chopped
1 tsp Ginger garlic paste
1/2  tsp garam masala
1tsp coriander powder
2 bread slices, toasted and powdered
Chopped cilantro - 2 tsp
Salt
Chilli powder- 1tsp
Lime juice - 1tsp
Milk 2 tbsp
Directions:
Preheat oven to 400.
Mix all the ingredients well. Make 1 inch balls, place them on a greased  baking sheet. Bake for 30 minutes.
Serve with onion and lemon slices.

Coconut fried rice

Ingredients:
Cooked rice -  2 cups.
Grated fresh coconut - 1 cup
Chopped Green chillies - 1tsp
Chopped Ginger - 1tsp
Oil - 2 tbsp
Cashews
cumin seeds - 1/2 spoon
Mustard seeds - 1/2 spoon
Chana dal - 1/2 spoon
Urad dal - 1/2 spoon
Curry leaves.

Directions:
In a wide pan, heat oil and fry cumin,  mustard seeds, chana dal, urad dal, curry leaves and cashews. Add coconut, chopped chillies and ginger,  fry for 2 minutes.  Add rice and salt, mix well and fry for another 2 minutes.

Pigs in a blanket


Ingredients:
Mini turkey smokies
Puff Pastry sheets
Jalapenos
Directions:
preheat oven to 400.
Cut Jalapenos length wise, remove seeds.
Cut the Pastry sheet into small strips, place a jalapeno half in the middle,(optional- sprinkle a pinch of salt on jalapenos). Place a turkey link on jalapeno and wrap with pastry dough.
Bake  for 30 minutes turning them half way through.
Serve with ketchup.
