Potato and Turnip greens fry




Ingrediants:
Frozen Hashbrowns (cubed potatoes)
Frozen chopped turnip greens
salt
chilli powder
oil
mustard seeds
cumin seeds
dried chillies
turmeric powder
Directions:
Heat 3-4 spoons of oil in a pan, add mustard seeds, cumin and chillies, fry for 1 minute, add a pinch of turmeric powder. Add potato and turnip greens, directly from freezer bags. Fry for 5 minutes.
Add Salt, cover the pan and leave about 10mnts. remove cover, add chilli powder, fry for another 10mnts.
Variations:
Turnip greens can be skipped.
Chana dal and urad dal can also be added with mustard seeds.
coriander powder can be added with chilli powder.
Note:
Frozen section of any grocery store will carry these Hashbrowns and Turnip greens







Dondakaya/Tindoora/Ivy gourd masala curry

 
Ingrediants:
1 pound fresh dondakaya
1 medium sized onion
2-3 green chillies
2-3 dried red chillies
2 spoons grated coconut(I use frozen)
2 spoons Almonds, soaked in water.
1 spoon Ginger garlic paste
1 spoon coriander powder
3 spoons oil
salt
Directions:
Step1:Boil onion in microwave with little water for 4 minutes, blend with green chillies and ginger garlic paste,  into a paste.
Step2:Grind dry chillies, coconut and almonds into a paste.
Step3:Remove stems from dondakaya, make length wise slits with a knife. In a wide thick bottomed vessel, heat 2 spoons of oil, add veggies and  pinch of salt. cook until the veggies are soft, stirring occassionally, may take upto 15 minutes. remove the cooked veggies into a seperate dish.
Step4:Add 1 more spoon oil to the same pan and add blended onions, cook until brown. add coconut paste and salt to onions, cover and cook for 10 minutes. add veggies back into the gravy and coriander powder, mix well and cook for another 5 mntues.










Methi Shrimp curry

Ingrediants:
2 cups peeled shrimp
1 big onion,chopped
1/2 cup methi leaves, chopped
1/2 cup green peas (optional)
2 green chillies, chopped
1 spoon ginger garlic paste
1 spoon coriander powder
1/2 spoon garam masala
2 spoons oil
salt
1/2 spoon chilli powder
1/4 spoon turmeric powder
Directions:
Hear oil in a pan, fry onions and green chillies for 5 minutes. add ginger garlic paste, fry another 2 minutes. add shrimp, turmeric, salt and chilli powder. stir, cover and cook for 5 minutes. add methi leaves and green peas, cover and cook for 10 minutes ( i use frozen chopped methi leaves and frozen peas). Add coriander powder, garam masala, stir and take off from heat.

Soy chunks curry

Ingrediants:
1 big onion , chopped
2 green chillies , chopped
1 spoon Ginger garlic paste
1 spoon coriander powder
1spoon chopped coriander leaves.
1/2 cup milk
2 cups soy chunks/ meal maker
2 cups water to boil soy chunks
2 spoons oil
Salt
1/2 spoon chilli powder
Directions:
Boil soy chunks in water until soft. Add more water if needed. Drain water. In a pan, heat oil, fry onions and chillies for 3 minutes. Add ginger garlic , fry another 2 minutes. Add soy chunks, salt and chilli powder, cover and cook for 2 minutes. Add milk, cover and cook for another 5 minutes. Add coriander powder and leaves, stir and take off from heat.

Mokkajonna vadalu/sweet corn vada

Ingrediants:
Frozen Sweet corn - 6 cups, thawed.
Chana dal - 1 cup, soaked in water for 3hrs.
Urad dal - 1/2 cup, soaked in water for 3hrs.
Green chillies - 10
Ginger - 2 spoons chopped
Green onions - 2 cups chopped.
Salt.
Corn flour (optional)
Oil to deep fry.
Directions:
Grind Corn, chana dal, urad dal, chillies and ginger into coarse paste, try not to add water. Add salt and chopped green onions. if the batter looks thin, add corn flour. Make vada and fry in oil.Serve with chutney.

Dosaavakaaya/Yellow cucumber pickle

Ingredients:
yellow Cucumber - 1 medium
Salt- 3 spoons
oil -3 spoons
chilli powder - 3 spoons
lime juice 3 spoons
methi powder - 1/4 spoon
mustard powder - 1/4 spoon
2 cloves garlic - crushed
Directions:
 cut cucumber into pieces,remove all the seeds. mix all ingrediants in a glass bowl. cover and leave it for 1 day before eating. add more salt and lemon juice if needed.

Coffee chocolate fudge

Ingrediants:
3 cups milk chocolate chips
1 can sweetened condensed milk
1/4 cup butter
1 teaspoon instant coffee powder
Chopped nuts (optional)
Directions:
In a big microwave safe bowl, add chocolate chips, butter and condensed milk. Microwave on high for 4 minutes. Take out, Add coffee powder and nuts, quickly stir and combine the mixture well. Pour into greased dish. Let cool and cut into pieces.

Oatmeal banana cookies.

Ingrediants:
2 ripe bananas
1cup oatmeal
Walnuts, raisins, cinnamon
Directions:
Mix all ingrediants well. Preheat oven to 350. On a greased cookie sheet, place cookie dough and bake for 15 minutes.

Orange soda cake

Ingrediants:
Cake mix 1 pack
Orange soda- 1&1/2 cups
Frozen Cool whip- 8oz thawed
Directions:
Preheat oven to 350. Mix soda and cake mix well. Pour in greased cake dish. Bake for 30 minutes.
Let cool and cover with whip cream.

Chocolate and cake fudge

Spinach Rice

Ingredients:

Chopped Spinach - 3 cups
Basmati rice - 3 cups
onions - 1 small, sliced
Water - 4.5 cups
Ginger garlic paste - 1 tbsp
Cinnamon Stick - 1
cloves - 6
cardamom - 4
anise flower - 2
bay leaf - 2
cashew nuts - optional
oil - 3 spoons
Ghee - 2 spoons
Salt

Directions:

Heat Rice cooker dish on stove top. add oil and ghee together.
Fry all the dry spices and cashews for 2 minutes, add onions, ginger garlic paste. fry for another 2 minutes. Add chopped spinach cover and cook for 4-5minutes
Add rice and mix well. Remove from stove and place in rice cooker. add water and salt. cover and cook.
