Mixed Vegetable and Tomato curry

Frozen mixed vegetables - 1 pack. (cauliflower,carrot, Lima beans, peas, green beans)
1 can chopped tomato can.
grated ginger - 1/2 spoon
salt - 1 spoon
chlli powder - 1 spoon
coriander powder - 1/2 spoon
oil - 3 spoons
mustard seeds - 1/4 spoon
cumin seeds - 1/4 spoon
curry leaves optional
Heat oil, add cumin, mustard seeds and curry leaves. add ginger and fry for 1 mnt.
Add frozen vegetables, cover and cook for 5mnts.
Add salt and tomato, cover and cook for 10 mnts. check the carrots are soft, add chilli powder and coriander powder.
Cover and turn off heat.
