Spinach and Chickpeas.

Ingredients:
1 can chickpeas- washed and drained.
1 pack frozen chopped spinach
oil-2 spoons
mustard and cumin seeds 1/2 spoon each
salt
3-4 green chillies
Directions:
In a pan, heat oil, add mustard and cumin seeds, fry for 30seconds. add green chillies and frozen spinach. cook on high heat for 10 minutes, stirring occasionally. add salt and cook for another 5 minutes in medium heat until the spinach is well cooked and all the liquid is evaporated. add chickpeas. cover and cook for 2 mnts. Turnoff heat.

Mixed Vegetable and Tomato curry

Ingredients:
Frozen mixed vegetables - 1 pack. (cauliflower,carrot, Lima beans, peas, green beans)
1 can chopped tomato can.
grated ginger - 1/2 spoon
salt - 1 spoon
chlli powder - 1 spoon
coriander powder - 1/2 spoon
oil - 3 spoons
mustard seeds - 1/4 spoon
cumin seeds - 1/4 spoon
curry leaves optional
Directions:
Heat oil, add cumin, mustard seeds and curry leaves. add ginger and fry for 1 mnt.
Add frozen vegetables, cover and cook for 5mnts.
Add salt and tomato, cover and cook for 10 mnts. check the carrots are soft, add chilli powder and coriander powder.
Cover and turn off heat.

Cabbage Fry

Ingrediants:
Cabbage - 1 medium 
oil - 3 spoons
salt-1 and half spoon
chilli powder or chilli pepper flakes - 1 spoon. I used flakes.
for seasoning:mustard seeds, cumin seeds, chana dal, urad dal, curry leaves, turmeric
1/2spoon-cumin powder and 1 clove chopped garlic (optional)
Directions:
Chop Cabbage to small pieces,  I used food processor.
Heat oil in a wide pan, add all the seasoning ingrediants, fry for 3 mnts.
add cabbage and salt, cover and let cook on medium heat for 5mnts.
remove cover, fry on high heat for another 5mnts. turn the heat to medium, add chilli powder, chopped garlic and cumin powder. mix well. cover for 5mnts. and turn off the heat.

spinach and moong dal(pesara pappu)

Ingrediants:
moong dal - 1 cup
spinach - 3 cups chopped
green chillies - 3 or 4
salt
oil- 3 spoons
cumin seeds,mustard seeds, dry chillies, curry leaves and turmeric for seasoning.
onion - 1/2-chopped (optional)
lemon juice- 2 spoons (optional)
Directions:
Boil dal til soft, drain excess water.
in a wide pan, heat oil, fry all seasonings. add green chillies and onions. fry for 2 mnts. add chopped spinach and salt, cook for 5mnts. add boiled dal, cook for 2mnts and turnoff heat. let cool for a while and add lemon juice.
to make it a dry curry, dal should be boiled a little less and not too soft. drain off excess water. also fry spinach 2 more minutes until dry. and then add dal.

Cake Mix Cookies

Ingrediants:
1 pack Cake mix- any kind
1 egg
1/4 cup oil
1/4 cup water
optional Toppings: cherries, chocolate chips, white chocolate chips, coconut flakes, cinnamon poweder.
Directions:
Add oil, egg and water into cake mix. make sure there are no lumps in the dough.
Using a small tea spoon, scoop dough onto a cookie sheet.Place toppings on to dough. Bake in 350 for 10mnts. Cool and store.
