Cake mix+Pumpkin puree muffins

Ingrediants:
Yellow cake mix - 1 pack
Pumpkin puree - 1 can

Directions:
Mix pumpkin puree in cake mix.
Pour into muffin pan, bake for 20mnts in 350 degree oven.
Makes 12 muffins - 200 calories each.

Chepala pulusu/ Fish curry.

Ingredients:
Fish - 2lbs (I used Tilapia boneless skinless fillets)
onion - 1 chopped
green chillies - 2 chopped
tamarind juice - 1 cup
salt
chilli powder - 1 tsp
ginger garlic paste - 1 tsp
coriander powder - 1 tsp
turmeric - 1/2 tsp
oil - 2 tbsp
mustard seeds - 1/4 tsp
cumin seeds - 1/4 tsp
methi seeds/fenugreak seeds - 1/4 tsp
curry leaves - few ( optional)
methi powder - 1/4 tsp  ( optional)
mustard powder - 1/4 tsp ( optional)

Directions:
Heat oil in a shallow pan,fry curry leaves, methi seeds, cumin and mustard. Add onion and chillies. fry for 5mnts. Add ginger garlic paste fry another 5 mnts. Add tamarind juice, salt, chilli powder,turmeric and bring to rolling boil. add fish pieces, cover and cook for 10mnts. add coriander powder and optional methi and mustard powders. cover and cook for another 10mnt and low flame. Turn off heat. Let cool completely before serving with rice.

Zucchini chana dal curry/senaga pappu zucchini koora

Ingredients:
Chana dal - 1 cup - half boiled.
Zucchini - 2 - cut to small pieces
onion - 1 small - chopped
green chillies - 2 chopped
ginger garlic paste - 1 tsp
coriander powder - 1 tsp
salt
chilli powder - 1tsp
oil
mustard seeds, cumin seeds - 1/2 tsp each.
curry leaves
Directions:
Heat oil, add mustard, cumin seeds and curry leaves. add onions and green chillies, fry for 5 minutes. add ginger garlic paste, fry another 5mnts. add zucchini pieces and salt. cover and cook for 10mnts. add chana dal, cover and cook until zucchini is soft. add chilli powder, coriander powder, cover for 5mnts and turn off heat.

Tomato eggplant chutney

Chutney Ingrediants:
Eggplant - 1 lb
Tomato- 1lb
Green chillies- 10
Tamarind-1tsp
Garlic-3 cloves
Cumin-1 tsp
Salt
Oil -2tbsp
Chopped onion 1tsp
Seasoning Ingrediants:
Oil -1tbsp
Mustard seeds
Cumin
Urad dal
Chana dal
Curry leaves
Directions:
In a wide pan, heat oil, fry chillies for 2mnts, remove.
In the same pan fry chopped eggplant with salt. Fry until soft and remove from pan.
Add chopped tomato,  fry until dry.
In the food processor, add all the fried vegetables, garlic,salt,tamarind,garlic and cumin, blend well. Mix raw onions to the chutney. Fry all the seasoning ingrediants and add to the chutney.

Strawberry Upside down Cake.

Ingredients:
Yellow cake mix - 1 pack
strawberry Jello mix - 1 pack
Fresh Strawberries - 2 cups chopped.

Directions:
Mix the cake batter as per directions on the box.
Preheat oven to 350.
Grease 9X13 cake pan,spread chopped strawberries evenly on the bottom.
Sprinkle jello mix over the strawberries. Pour cake batter on top.
Bake for 35 minutes or until done.
Let cool and invert the cake.

Pistachio Bundt cake

Ingredients:
Yellow cake mix - 1 pack
4 eggs
oil - 1cup
water - 1 cup
pistachio pudding mix - 3 packs
vanilla extract - 1 tsp
Glaze:
1/2cup - powdered sugar
1 tsp - melted butter
1 tsp - milk.
Directions:
mix all the ingredients well.
Pour into a greased bundt cake pan.
Bake for 60mnts in 350 degree oven.
Let cool the pan for 1hr.
remove from pan and cool down completely.
Mix the glaze, sprinkle over cake.

Pappu charu/ lentil soup

Ingrediants:
Kandipappu/toor dal - 1cup- boiled and blended into smooth paste.
Pearl onions or diced onions - 1 cup
Green chillies-2 chopped
Tomato- 1 big, diced
Tamarind juice-1 cup or 1 whole lime juice
Salt
Chilli powder- 1/2tsp
Sugar-1/2 tsp
Butter - 1 tsp
Oil -1tsp
Dry red chilly-1 whole
Mustard seeds-1/2 tsp
Cumin seeds-1/2 tsp
Turmeric -1/4 tsp
Curry leaves-4/5 optional
Coriander leaves- 1/4 cup chopped.
Directions:
Heat oil and butter in a deep vessel, add dry chilly,cumin,mustard, turmeric and curry leaves. Add onions, green chillies and tomatos. Cover and fry for 5 minutes. Add tamarind juice (if using lime juice just add water at this point and add lime juice at the end after turning off the heat), chilli powder and salt, bring it to rolling boil. Add coriander leaves, sugar and toor dal paste. Add more water if needed. Boil in low heat for 10minutes.

Spicey baked chicken drumsticks.

Ingredients:
Chicken drumsticks-6 ( skinless)
Ginger garlic paste- 1spoon
Salt
Chilly powder-1spoon
Masala powder - spoon(1/2spoon coriander seeds, 3cloves,1/2 inch cinnamon stick, grind to powder)
Oil - 2 spoons
Lemon juice -1 spoon.
Directions:
Mix all the ingrediants well and marinate chicken overnight.
Pre heat oven to 450.tin Foil wrap a wide pan, arrange chicken, loosley cover with foil. Bake for 40 minutes, flipping chicken mid time.

Coconut Pineapple Rice crispy Bars

Ingredients:
Butter - 1/4 cup/1 stick.
Marshmallows - 1 bag
rice crispy cereal - 6 cups
white chocolate chips - 1 cup
sweetened coconut - 1 cup
dried pineapple - 1 cup chopped.
Directions:
In a big pan, melt butter. add marshmallows and stir until melted on medium heat.
Add chocolate chips and stir to melt. Add coconut and pineapple, mix well and turn off heat. Add cereal immediatly and mix well, before the mixture gets thick. butter a wide dish, pour in the mixture. spread evenly and let cool before cutting into pieces.

kobbari undalu/ coconut sweet

Ingredients:
Grated coconut - 2 cups ( i used frozen grated coconut, Thawed)
sugar - 2 cups

Directions:
In a heavy bottomed skillet, mix coconut and sugar, turn on heat to medium low.
Cover and cook, stirring occasionally until the mixture slightly changes color, about 30 minutes. Turn off heat. let cool and make into balls.

Beerakaya pottu pachadi/chutney with ridge gourd peel

Ingrediants:
Peel of  2 gourds
1/2 gourd pieces
1 big tomato - chopped
green chillies -7to8
oil - 4 spoons
cumin,mustard seeds -1/2 spoon each
chana dal/senagapappu, urad dal/minapapappu - 1 spoon each
curry leaves - 1 sprig
tamarind - 1/2 spoon.
garlic - 1 clove
salt

Directions:
Heat 3 spoons oil, add cumin, mustard, chana and urad dals, fry for 1 minute. add curry leaves fry 30 seconds. remove curry leaves from oil. add peel, gourd pieces and green chillies to the dals,add salt and tamarind. cover and cook for 10 mintues.
move all of them into blender. using same pan, heat another spoon of oil and fry tomatoes for 5mnts. add to the blender.
let cool before grinding with garlic. mix the curry leaves to the chutney.


Shrimp curry

Ingredients:
Shrimp - 2 lbs, peeled.
onion - 1 big, chopped
green chillies - 3-4 chopped
tomato - 1 medium chopped
oil - 2 spoons
salt
chilli powder
turmeric powder
ginger garlic paste - 1spoon
masala - grind to powder of 1 spoon coriander seeds, half inch cinnamon stick, 4 cloves.
poppy seeds/gasa gasalu - 2 spoons, grind to powder.

Directions:
Heat oil in a wide skillet. medium heat.
fry onions and green chillies for 3 minutes.
Add ginger garlic paste and fry for another 3 mintues
add shrimp, tomato, salt, chilli powder,turmeric powder, stir well.
cover and let cook for 10 minutes. stirring once after 5mnts.
add poppy seeds powder cook until the gravy thickens.
add masala and turn off heat.

Smelt fish curry

Looks and tastes like bommidayala pulusu
Ingrediants:
Smelt Fish - 1lb (i got from walmart, frozen)
onion - 1 medium, chopped
green chillies - 4, chopped
ginger garlic paste - 1 tsp
tamarind - 1/4 cup, soak in water and make 2cups of juice
oil - 2 tbsp
salt
chilli powder
turmeric

Directions:
In a wide pan, heat oil, fry onions and green chillies for 4 minutes. Add ginger garlic paste, fry another 4 minutes. add tamarind juice, turmeric, salt and chilli powder, boil on high for 5minutes. add fish, cover and cook for 20 minutes, stirring just once gently. Turn off and let cool for 2hrs.
Optional: add 2 spoons of mango pickle oil before turning off the heat.

coconut&split chickpeas curry/senagapappu kobbari

Ingredients:
split chickpeas/ senagapappu - 1 cup
onion 1 small, chopped
green chillies - 3to4 chopped
coconut - grated 1 cup
ginger garlic paste - 1 tsp
coriander powder - 1 tsp
salt
oil - 3 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1/2 tsp
dry red chillies - 1
turmeric - 1/4 tsp
Directions:
boil chickpeas in water,til tender. not too soft. drain and save 1/4 cup of boiled water.
heat oil in a pan, fry dry chilly, cumin and mustard seeds for 1minute. add turmeric, onions and green chillies. fry for 3 minutes, add ginger garlic paste.
fry for another 3 minutes. add boiled chickpeas and coconut, cover and cook for 4-5minutes. add salt,1/4 cup of boiled water cover and cook for 5mnts. add salt, coriander powder, stir well , cover and turn off heat.

Toasted Brussels sprouts

Ingredients:
1lb Brussels sprouts
1 spoon olive oil
1 clove garlic, crushed
salt
crushed pepper flakes
Directions:
Heat oven to 350degrees. sprinkle olive oil on Brussels sprouts. Add garlic, salt and pepper flakes. spread on a cookie sheet. toast for 20mnts. Insert a fork and check if they are soft on the inside.
same method can be done for broccoli and cauliflower.

Banana and Nutella stuffed french toast

Ingrediants:
2 whole grain bread slices
1 egg
2tbs milk
1/2 banana, sliced
1tsp nutella
1tsp powdered sugar
1/4tsp cinnamon
butter to toast
Directions:
Heat skillet. In a wide bowl, beat egg and milk.
Apply nutella to one bread slice and spread banana slices on it.
close with another bread slice. place the sandwich in egg mixture, flip to cover both sides. add little butter to the skillet toast the sandwich, 2minutes on each side. Place in a plate, sprinkle with powdered sugar and cinnamon.

Orange Fluff Salad

Ingredients:
Orange jello mix - 1 pack
cottage cheese - 1 cup
orange - 1 can drained
crushed pineapple - 1 can
marshmallows - 1 small pack
whip cream - 8oz
sweetened coconut - 1/2 cup (optional)
Directions:
Mix cottage cheese and jello mix. add fruits, marshmallows and coconut, combine.
Now add whipcream, blend well.

Spinach and Chickpeas.

Ingredients:
1 can chickpeas- washed and drained.
1 pack frozen chopped spinach
oil-2 spoons
mustard and cumin seeds 1/2 spoon each
salt
3-4 green chillies
Directions:
In a pan, heat oil, add mustard and cumin seeds, fry for 30seconds. add green chillies and frozen spinach. cook on high heat for 10 minutes, stirring occasionally. add salt and cook for another 5 minutes in medium heat until the spinach is well cooked and all the liquid is evaporated. add chickpeas. cover and cook for 2 mnts. Turnoff heat.

Mixed Vegetable and Tomato curry

Ingredients:
Frozen mixed vegetables - 1 pack. (cauliflower,carrot, Lima beans, peas, green beans)
1 can chopped tomato can.
grated ginger - 1/2 spoon
salt - 1 spoon
chlli powder - 1 spoon
coriander powder - 1/2 spoon
oil - 3 spoons
mustard seeds - 1/4 spoon
cumin seeds - 1/4 spoon
curry leaves optional
Directions:
Heat oil, add cumin, mustard seeds and curry leaves. add ginger and fry for 1 mnt.
Add frozen vegetables, cover and cook for 5mnts.
Add salt and tomato, cover and cook for 10 mnts. check the carrots are soft, add chilli powder and coriander powder.
Cover and turn off heat.

Cabbage Fry

Ingrediants:
Cabbage - 1 medium 
oil - 3 spoons
salt-1 and half spoon
chilli powder or chilli pepper flakes - 1 spoon. I used flakes.
for seasoning:mustard seeds, cumin seeds, chana dal, urad dal, curry leaves, turmeric
1/2spoon-cumin powder and 1 clove chopped garlic (optional)
Directions:
Chop Cabbage to small pieces,  I used food processor.
Heat oil in a wide pan, add all the seasoning ingrediants, fry for 3 mnts.
add cabbage and salt, cover and let cook on medium heat for 5mnts.
remove cover, fry on high heat for another 5mnts. turn the heat to medium, add chilli powder, chopped garlic and cumin powder. mix well. cover for 5mnts. and turn off the heat.

spinach and moong dal(pesara pappu)

Ingrediants:
moong dal - 1 cup
spinach - 3 cups chopped
green chillies - 3 or 4
salt
oil- 3 spoons
cumin seeds,mustard seeds, dry chillies, curry leaves and turmeric for seasoning.
onion - 1/2-chopped (optional)
lemon juice- 2 spoons (optional)
Directions:
Boil dal til soft, drain excess water.
in a wide pan, heat oil, fry all seasonings. add green chillies and onions. fry for 2 mnts. add chopped spinach and salt, cook for 5mnts. add boiled dal, cook for 2mnts and turnoff heat. let cool for a while and add lemon juice.
to make it a dry curry, dal should be boiled a little less and not too soft. drain off excess water. also fry spinach 2 more minutes until dry. and then add dal.

Cake Mix Cookies

Ingrediants:
1 pack Cake mix- any kind
1 egg
1/4 cup oil
1/4 cup water
optional Toppings: cherries, chocolate chips, white chocolate chips, coconut flakes, cinnamon poweder.
Directions:
Add oil, egg and water into cake mix. make sure there are no lumps in the dough.
Using a small tea spoon, scoop dough onto a cookie sheet.Place toppings on to dough. Bake in 350 for 10mnts. Cool and store.
